Barbecued Blackened Chicken | |||

This is a "shake and bake"-type spice mix that you can use to coat chicken while barbecuing. Coat the chicken with the mixture, put on the barbecue, and drizzle a little melted butter (or margarine) over the chicken (2-3 tbsp. for 4 or 5 pieces). Let the flames subside, then cook until well-done.
The basic recipe is:
2 parts |
Ground White Pepper Onion Powder Cayenne Pepper Thyme Basil |

Garlic Powder Paprika Ground Black Pepper |

4 parts | Salt |
Note that this adds up to 23 parts. There are 16 tablespoons in a cup, so if you say a part is a tablespoon, you would end up with about 1 ½ cups of the spice mix.
